What you'll need:

  1. Spaghetti
  2. Leeks 2
  3. medium tomatoes 2
  4. One table spoon tomato puree
  5. prawns (optional)
  6. Turmeric (optional)
  7. Seasoning cube
  8. Crushed chilli pepper- sprinkle
  9. 20ml vegetable oil (4 tablespoons)


  1. Wash and cut the Leeks in circles or rings
  2. Chop tomatoes into small cubes
  3. Cook the spaghetti in a separate pot and turn off the heat when nearly soft, then add some olive oil to prevent it sticking
  4. Pour the vegetable oil into a large sauce pan
  5. Add the leeks and stir gently
  6. Add half teaspoon of turmeric but this is optional
  7. Add the fresh and puree tomatoes and stir in, allow the vegetables to cook tenderly on low heat. This should only be for about 2- 3 minutes. Add a little amount of water to form a thick sauce.
  8. Add salt to taste, sprinkle in crushed chilli pepper
  9. If using prawns, add into the saucepan at this stage and stir. Allow to cook for about 2 minutes.
  10. Stir in the spaghetti and mix well. Cook for another minute 2 minutes and ensure the sauces are blended in and well mixed.

How to store

Store the left over in a pyrex bowl and keep in the fridge. Consume within 48 hours.
